I am my father's son

I could take an hour or two to write about all the things that have changed in my life the past few months or i can just say that i am living in Houston working for Homeshield Pest Control. I love it out here. The economy seems to be better out here in Houston. I love my job, I get paid to kill bugs!!! Sometimes as i work i chuckle to myself to think how far i have come since i was a little kid. Instead of burning ants with a magnifying glass, I use chemicals. Recently I had to do a bee treatment, which we don't cover but thanks to a salesman and his mistake I had to do one any way. Here is a picture of my make shift bee suit.

The lady who owned the house let me use her pop up dog kennel to keep the bee's from biting my face off!

I have picked up a few new toys since i have been out of here one of them was such a good deal and just fell into my lap. Ever since i had to ride a bike around i have enjoyed riding a bike and have always wanted a road bike. While spraying out the garage of a gentlemans home i noticed this bike sitting there and we started talking about it and i stated how i really wanted a bike like that and asked him where he got it. He told me he had bought it from a friend for one hundred dollars and had good intentions to ride it but it was a little small for him (he was 6'2".) He then told me that he would sell me the bike for 50 dollars. With a deal like that how could i say no? So now i own this bike... So friggin cool!

For my final topic of the day and the reason i titled this blog the way i did. You may be aware that BBQ is huge here in Texas. They are kind of known for their kick ass BBQ skills. Well you know what they say when in Rome... I decided when i moved here that i was going to learn the techniques and methods of BBQ. Last weekend i bought myself a smoker.
If you are from the west coast like i am you may have never seen a smoker like this. My father had one but it was a little one that was a vertical smoker. I was instructed by a local if i wanted to BBQ right i should get one of these bad boys that has a separate chamber for the fire. The Large chamber of the grill is where you put the meat and the lower chamber is where you build your fire so that way you can cook low and slow. This method makes rib meat fall of the bone, Brisket soft and tender, and all the awesomeness of BBQ come to full effect. Last sunday i smoked ribs for 5 or 6 hours and today i am on hour 8 of 10 in the process of smoking a brisket. So for those of you that knew my father you probably understand how this makes me my fathers son. My dad, Alan Jennings Leatham was a Black Pot Cooker. He loved dutch ovens and any type of cooking that he could do outdoors. I learned so much from him the 17 years of my life. I am proud to say that i have been able to take what he had taught me and add to it. I now love the cooking spirits of the outdoors. Smoking has taught me patience and given me a new appreciation to the time and effort that great food takes.
